4-5PoundsFish Bones/Skin/Tails/Heads/Fins from Halibut, Sole, Cod,
  Flounder or other white fish, do not use Salmon or Mackerel
1   TBSP   Olive Oil
1 1/2    Cup     Leeks, whole leeks sliced or just tops will work
1   Each    Fennel, sliced
1   Each    Celery Stalk, sliced
1   Each    Carrot, peeled and sliced
2   Each    Shallots, peeled and sliced
2   Each    Garlic Cloves, peeled and sliced
1   Bunch  Thyme, fresh
1/2      Bunch  Italian Leaf Parsley
3   Each     Bay Leaves
1   TSP      Peppercorns, Black
1   TSP      Kosher Salt
1   Gallon  Cold Water, purified
